Are You Looking For A Sake To Pair With Oysters?
Sake and oyster pairing has slowly gained its popularity. A new brew for oysters has been created. While it's an authentic sake, it's as sweet and sour and juicy as white wine, and it doesn't just go with the taste of oysters. The malic acid contained in this drink is also good for the body, a completely new concept.
Today, we’d like to introduce you the Sake-Imayotsukasa Sake for oysters IMA, this Junmai Sake is specifically designed to pair with oysters.
The best companion with oysters
Scientifically speaking, umami consists mainly of amino acids. Both Sake and oyster contain a high level of the amino acid, and thus these two are a perfect match. As the name suggests, it is a sake made for pairing with oysters. The unique sour taste perfectly brings out the umami and creamy feel of fresh oysters.
Produced after 3 years of R&D to pair with oysters, using a special strain of yeast to create higher levels of malic acid, which can help the human body absorb the nutrients of oysters. This creates a juicy acidity to lighten the palate after having oysters. Not only oysters, the sweetness and sourness of the sake with a refreshing finish that will go perfectly well with any sort of seafood dishes!
What is the IMA?
One of Imayotsukasa's principles is to celebrate the past and the present, and continues to create new concepts and designs while preserving the old traditions.
IMAYOTSUKASA BREWARY CO., LTD.
Imayotsukasa Brewery was founded in 1767 in Niigata City and since 2006 has been brewing only Junmai Daiginjo, Junmai Ginjo and Junmai sake without any added brewing alcohol, a rarity in Japan. It also runs a sake brewery tour and direct sales shop, and was ranked first in Niigata City's tourist ranking by TripAdvisor.
Sommelier's Notes
A modern style of sake meant for pairing with western food. It is a good replacement for food traditionally paired with white wine.
There is no doubt that you will be impressed that the variety of "sake" has come to this point! The sweet and sour and juicy taste matches fish and shellfish.
