What is Junmai Ginjo?

 

The Junmai Ginjo category of sake are mandated to have a rice polishing standard of 40% removal and 60% remaining. This segment of sake are made using only the simplest ingredients of rice, water, mold, and yeast. Remember the word Junmai means “rice and water only”, so Junmai Ginjo translates to rice and water milled to 60%. Junmai Ginjo is a great collection of brews that can be fruity and fresh to ricey and dry. This category is perfect for the sushi counter  - clean and balanced cuisines – and easy sipping. Best served chilled.

Suishin Junmai Ginjo Inaho

 

Suishin was Yokoyama Taikan's favourite drink. For Taikan Yokoyama, Suishin was his staple food. It is said that he ate only a small amount of rice in the morning. The rest of the day was spent drinking Suishin, which is said to have provided him with all his calories.

 

The connection between Suishin and Taikan Yokoyama goes back to the early Showa period. They met back in the early Showa period.

 

Suishin Junmai Ginjo Inaho is made from soft water and white rice polished to 60% and carefully brewed to 60%.

Inaho is a refined and finely textured "Ajiginjo" sake.

Origin of "Suishin"

 

The company was founded in 1860, in the first year of the Manen era. It is the only sake brewery in Mihara, Hiroshima Prefecture, an old and famous brewing area. In the middle of the Meiji period, the head of the brewery at that time named the brewery "Yoyogokoro" (meaning "good heart"), but as its fame increased, it came to be known as "Suishin" (meaning "drunken heart").

 

In the Taisho era, the sake won the first prize at the National Sake Competition three times, and since then it has become known throughout Japan as the best sake of Hiroshima Prefecture.

 

 

The Secret of “Oishiii”

 

At present, Suishin Yamane Main Store uses "rare soft water" drawn from the foot of Mt. Takanosu in central Hiroshima as brewing water, and is working on its own "soft water brewing".

 

The brewing process is slow and requires delicate techniques, but the resulting sake is fine and smooth in flavour. Suishin continues to brew "sake that you will never get tired of drinking" using the unique "soft water brewing" method.

Recommendations

 

Suishin Junmai Ginjo Inaho has a slightly dry taste with a relaxing aroma and a deep flavour thanks to a "long-term low-temperature fermentation process" using soft water and carefully selected Suishin's secret "Ginjo yeast".

 

It is recommended for sake during meals, especially for Japanese food and Western food with light seasoning.

 

It can be enjoyed at any temperature, but is best served cold (below 10°C) or chilled (room temperature). Recommended for those who wish to enjoy sake and food in a relaxed atmosphere.
