What is Ginjo?
Ginjo (吟醸) is premium sake that uses rice that has been polished to at least 60 percent. It is brewed using special yeast and fermentation techniques. The result is often a light, fruity, and complex flavor that is usually quite fragrant. It’s easy to drink and often (though certainly not as a rule) served chilled.

KONISHI BREWING COMPANY LTD.
Konishi is one of the oldest sake breweries in Japan, with a family history dating back to 1550. The brewery is currently run by the 15th generation.
The own label sake, Shirayuki (‘white snow’), is based on this family tradition and age-old brewing techniques. Konishi also markets a range of innovative, premium sake under its own name.
In 1988, Konishi began importing Belgian special beers to Japan, including the Gouden Carolus range. The personal relationship between the two family breweries along with their belief in the excellent quality of each other’s products has resulted in further cooperation: the distribution of quality Japanese sake.
