What is “Nanada”?
“Nanada” is a pure rice sake newly launched in 2001 by Kensuke Nanada, the 6th generation brewer of Tianshan Sake Brewery, to make it a liquor that shines with the modern eating habits of the 21st century.
It features a mild and elegant aroma and a well-balanced taste of rice with umami and sourness. It has an impact when you put it in your mouth, and you will want to drink the second cup while feeling the umami of rice firmly. “Nanada” is brewing with the aim of making pure rice sake with good sharpness.

The story behind the birth of the Nanada 70% 50-minute polishing series
Rather than ginjo or daiginjo, which polishes rice, sake was born from the idea that good rice should not be over-polished and should be polished for 70% and 50% to make the most of its original umami.
What kind of rice is “Chunyang”?
“Chunyang”, which was newly used in the 70% and 50-minute polishing series, is low-glutelin rice, which is about 4 to 5% of the rice in general circulation (Koshihikari, Hitomebore, Akitakomachi, Sasanishiki, etc.). It has the feature of low protein content.

Tianshan Sake Brewery Co., Ltd.
Founded in 1861, the company's roots are in the water mill business (flour milling business). In 1875, the brewing business was started by purchasing a liquor store that was going out of business. It is written in the literature that Sakamoto Ryoma used to drink Tenzan in Kyushu.
The warehouses have a strange architectural style, with a series of warehouses from the Taisho, Meiji, and Showa eras. It is also registered as a tangible cultural asset by the prefecture, which reminds people of the depth of the brewer's knowledge.
