What is "Kaga Tobi" ?
The 'Kaga Tobi' are the feudal lord's firefighters in charge of the Kaga clan's Edo residence. They were the best firefighters in Japan in terms of skill and fighting speed, and their appearance with their tobiguchi in their long coat of arms dyed with lightning in the clouds and leather haori with a matching crest was lively and brave, and they were popular in the eight hundred and eight townships as a stylish group.
Kawatake Mokuami's masterpiece, Megura Nagaya Umegakatobi (The Blind Nagaya Plum Kagatobi), vividly depicts the human feelings and customs of Edo in connection with the quarrel between these kagatobi and the town firemen.

100% contract-grown and specially cultivated rice suitable for sake brewing is used. Junmai Ginjo is brewed with flower yeast isolated from cherry blossoms, while Junmai is brewed with carefully selected yeast that produces an elegant aroma.
It is characterised by its light and crisp flavour, which can be fully appreciated with food pairings. ("Flower Yeast" is a yeast isolated from the Department of Brewing and Fermentation, Junior College of Tokyo University of Agriculture.)
