What is “'Hanegi Shibori” ?
Haneki Shibori is a historical style of pressing used only by a handful of breweries today. This pressing process involves placing the unrefined sake in a sake bag, loading it into a tank, hanging the weights from a giant haneki tree and applying gentle pressure using the principle of leverage to slowly and gently press the sake over time to produce a flavourful sake.

A sake that makes you feel the spirit of the brewery
600 years back in time. The ancestors of the Kanda family, who accompanied the monk Itsukuchu, son of Kujo Kanpaku, down from Kyoto to Higo Tamana County, put down roots in Kumamoto. In 1902, Kakuji and Shigesaku Kanda took over Kanda, which belonged to Myoken Shrine, and began brewing sake with rice and Iwashimizu water from this spring.
The fragrance of plum blossoms from the trees around the brewery wafted into the brewery, giving rise to the sake named 'Hananoka', and the company name was changed to 'Hananoka' so that customers would know and love the product name and the thoughts behind the founding of the company.
Even now, in spring, the fragrance of plum blossoms can be smelled inside the brewery.
The spirit of the brewery is still alive today, with its clear water, quality rice and the spirit of the master brewer and brewery workers.

What is “Kumamoto's Sake” ?
The wonderful transition of the four seasons of Japan and Kumamoto, which is also the birthplace of Hananoka Sake Brewery, was brewed in the scent of the flowers of "ume, cherry blossoms, and chrysanthemums.”
The three themes, "flower scent," are brewed from the combination of No. 9 yeast alone and No. 9 yeast + compatible yeast that originated in Kumamoto.
Returning to its founding desire "to be a local sake and to continue to be loved", it becomes "Kumamoto's sake", available only in Kumamoto Prefecture.
