The head of the brewery, Mr Yukichi Goto, says: "I want Goto Sake Brewery's sake to be a friendly sake with the flamboyance and lightness that typifies Yamagata." The Junmai Ginjo is a sake brewed on a relatively small scale.
Junmai Ginjo was created by carefully carrying out each step of the brewing process with the aim of achieving the ideal koji, as is typical of the relatively small Goto Brewery.
