What is “Kubota”?
Kubota is a Japanese sake brand that was established in 1985. 37 years since its birth, it is still a young brand among sake with a history of several hundred years, but it has grown to the point where it is known even to people who do not drink sake.
Kubota is produced at the Asahi Shuzo Brewery in Nagaoka, Niigata Prefecture. Asahi Shuzo was founded in 1830 under the trade name 'Kubotaya'. Kubota bears this house name. While the conventional wisdom was that sake should be sweet and rich in flavour, Asahi Shuzo was convinced that from now on, people would demand light, dry sake that they would never get tired of drinking, and so they launched Kubota. The sharp taste and the fact that it never got tired of being drunk had a shocking effect and changed the image of traditional sake by 180 degrees.

Kubota Senju, the very origin of Kubota
Kubota Senju is the very origin of Kubota, first created in 1985 when Kubota was launched. The company was inspired by the shift in the basis of work for Japanese people living in urban areas, from physical to intellectual labour, and was oriented towards a 'light and dry' style. By fundamentally improving sake brewing, Kubota achieved a taste that was not for everyone at the time: clean, light and dry, but with a hint of mellowness.
Thirty-five years have passed since then. In keeping with the times, they have sought to further develop a "clean taste that goes well with food". They have made sure that the fermentation process is highly precise at low temperatures, and have increased the refreshing taste with less cloying flavours. By maximising the koji, they have also created a wider range of flavours, while maintaining the clean, refreshing and light taste.
